TO MAKE YOUR NUT MIX
  1. Melt the butter, honey, and maple syrup together in a pan over medium-low heat, just until smooth and glossy.
  2. Stir in the cinnamon, coriander, cardamom, and orange zest. Everything should smell warm and fragrant almost immediately.
  3. Add the nuts and toss to coat, letting them toast gently in the glaze for 3 to 4 minutes, stirring often, until evenly coated and lightly glossy.
  4. Tip onto a parchment-lined tray and spread into an even layer. Finish with flaky salt.
  5. Let cool completely. The coating will set slightly as they sit.
