It’s been real. You are suuuuper awesome BUT we’ve for sure been hanging out too often. I need a little break. I’m not replacing you per se but we won’t be hanging out this weekend. It’s time to use my mimosa to toast another toast.

HONEY BALSAMIC GLAZED PEAR AND BLACKBERRY TOAST

TO TOAST YOUR BREAD
  1. Preheat your oven to 400º.
  2. Place your slice of sourdough bread on your baking sheet.
  3. Drizzle your olive oil on the top side of it.
  4. Bake until toasted—about 6 minutes.
  5. Remove from oven and set aside.
TO GLAZE YOUR PEARS
  1. In your frying pan over a moderately-high heat melt your butter.
  2. Fully whisk in your honey.
  3. Lay your pear slices in your pan.
  4. Let sit untouched for 3 minutes.
  5. Pour your balsamic over all of your pears and let sit. This will cause a bit of bubbling as the pears begin to caramelize.
  6. Let your pears sit untouched until they begin to blacken on the edges—about 3 minutes.
  7. Remove your frying pan from the heat.
  8. Set aside.
TO ASSEMBLE YOUR TOAST
  1. Spread a layer of mascarpone on your toast. It should be just thick enough that you don’t see through it.
  2. Season with a little salt.
  3. Use your cooking tweezers to transfer your pear slices in a fanned out row over your mascarpone.
  4. Use your hands to place your blackberry slices into the spaces between the pear slices.
  5. Sprinkle on your thyme.
  6. Optional: If you want a little extra sweetness, drizzle on a little honey.
