PEANUT BUTTER CUPS … customized.

I figured if I’m making them, I should make them unique, right? Drum roll, please. Enter, the PB&J cup. I took my homemade Peach & Strawberry Jam (bright, sweet, and summery as a farmer’s market morning) and layered it over sweetened peanut butter, all tucked inside rich chocolate shells. A sprinkle of crushed peanuts in between the peanut butter and jam layers adds just the right amount of texture. It’s a little bit nostalgic, a little bit elevated, and definitely a recipe worth repeating with whatever fruit you’re preserving next.

TO MAKE YOUR PB&J CUPS
  1. In a microwave-safe bowl, combine the chocolate and coconut oil. Melt in the microwave in 30 second intervals until smooth and glossy. Make sure to mix every 30 seconds to avoid burning.
  2. To form the bottom of your shells, line your muffin tin and spoon about 1tablespoon of melted chocolate into each cup. Use the spoon to coat the bottom and slightly up the sides. Freeze for 10 minutes until firm. Reserve the rest of your chocolate for closing off the top later.
  3. To make your peanut butter filling, in a small mixing bowl, mix the peanut butter with powdered sugar until thickened but still spreadable. Taste and adjust sweetness as needed.
  4. Layer your fillings! Spoon about 1 tablespoon of peanut butter into each chocolate shell, gently smoothing the top.
  5. Sprinkle crushed peanuts over the jam layer for texture and salty contrast.
  6. Add 1 to 2 teaspoons of strawberry peach jam, letting it sit naturally or swirl slightly with the tip of a knife.
  7. Close off your cup. Spoon more melted chocolate over each cup, sealing in the filling completely. Gently tap the tray on the counter to smooth the tops and release any air bubbles.
  8. Refrigerate or freeze for 20 to 30 minutes, or until fully set and firm to the touch.
  9. Peel away the liner, admire your candy-making genius, and enjoy straight from the fridge for the ultimate snap.
