TO PREP YOUR INGREDIENTS
  1. In a small mixing bowl, mix the pumpkin puree and pumpkin spice until even.
  2. In a medium bowl, combine all the shredded cheeses (your gruyère, yellow cheddar, sharp white cheddar, and parmesan). Toss until evenly incorporated.
TO MAKE YOUR SANDWICHES
  1. Butter one side of each slice of sourdough bread. Flip over 4 of the slices and spread the pumpkin mixture on the unbuttered side.
  2. Top the pumpkin-covered slices generously with the cheese blend. Then, close each sandwich with a second slice of bread, buttered side facing out.
  3. Heat a nonstick pan or griddle over medium heat. Melt a little extra butter in the pan, just enough to coat it.
  4. Place 2 sandwiches in at a time, cover with a lid, and cook until the bottoms are golden, about 5 minutes.
  5. Flip each sandwich, cover again, and cook until golden and the cheese is molten and dreamy, about 3-4 more minutes.
  6. Repeat with the remaining sandwiches. Slice, serve, eat & enjoy!
