TO MAKE YOUR DINNER
  1. Preheat your oven to 425º.
  2. In a mixing bowl, toss the butternut squash, shallot, and garlic with olive oil, maple syrup, salt, pepper, and smoked paprika until evenly coated. Spill it all onto a baking sheet in a single layer, making sure to open up space for the chicken.
  3. Pat the chicken breasts dry with a paper towel. Rub with olive oil, then season with salt and pepper. Gently lift the skin and tuck a couple of sage leaves underneath each breast for extra aromatic flavor.
  4. Place the chicken skin-side up directly onto the sheet pan in the spaces you made earlier.
  5. Roast for 30 to 35 minutes, or until the chicken skin is golden and crisp, the squash is caramelized at the edges, and the internal temp of the chicken reaches 165º.
  6. 5 minutes before you're done roasting, scatter extra sage, basil, and rosemary leaves on the pan.
  7. Set your pan on top of your stove and let your chicken rest for 5 minutes.
  8. Serve. Eat. Enjoy!
