This sheet pan squash medley is everything I love about fall. Simply toss all of the ingredients together on a sheet pan, bake, and smell the incredible aroma fill your home. The warm spices, sweet apple, and a trio of squashes really come together in the oven to make this simple, no-fuss recipe that works just as well as a weeknight dinner side as it does plated next to turkey or stuffing at Thanksgiving or Friendsgiving.

TO ROAST YOUR SQUASH MEDLEY
  1. Preheat your oven to 425º.
  2. In a large mixing bowl, combine the delicata squash rings, honey squash chunks, acorn squash chunks, and diced pink lady apple.
  3. Drizzle with extra virgin olive oil until everything has a nice glossy coat. Add salt, pepper, cinnamon, nutmeg, clove, and the chiffonaded sage leaves. Toss to combine.
  4. Spread the mixture out evenly on a sheet pan.
  5. Roast for until the squash is tender and edges are caramelized, about 45 minutes.
  6. Transfer to a serving dish and finish the whole sage leaves.
  7. Serve warm or let it cool and pack it up for this week's side dish.
