TO MAKE YOUR FISH.
  1. Preheat your oven to 400º.
  2. Fold each sheet of parchment in half, then reopen it so you have a center crease to guide your folding.
  3. Place two salmon fillets just off-center on each parchment sheet. Season both sides of the fillets with sea salt and black pepper.
  4. Layer lemon slices over the top of each piece of salmon.
  5. Layer on 4 basil leaves on each piece of salmon.
  6. Fold the parchment over the fish and crimp the edges to seal the packet completely in a delicate half-moon shaped envelope.
  7. Set the packets on a baking sheet and bake for 15 minutes, until puffed and aromatic. The fish should be tender and flake easily.
  8. Serve in the parchment for its beauty.
