TURKEY TACOS WITH PEACH & MINT CREMA

SUMMER TACOS … they’re just peachy!

These are my peach-perfect answer to taco night monotony—and yes, they’ve officially earned "repeat request" status in my kitchen.

Lean ground turkey gets spiced up with cumin, cinnamon, and juicy chunks of fresh peach tossed right into the skillet. It's savory with a subtle kick and just enough natural peachy sweetness to give it a summer vibe. Then, there’s the crema: a cool, minty blend that builds off of greek yogurt and continues to celebrate summer with more peach.

To top it all off, I sprinkled on chopped peach skin and tiny mint leaves. Pile it all on warm mini corn tortillas and just try not to go back for a second round. Spoiler: you will.

Ingredients

Instructions

TO MAKE YOUR GROUND TURKEY
  1. Heat grapeseed oil in a skillet over high heat. Add the ground turkey and begin browning. Use your wooden spoon to break it apart as it cooks. Season with salt, pepper, ground cumin, and cinnamon.
  2. When the turkey is nearly browned—about 2 minutes from done—add in the chopped peach. Stir to combine and finish cooking until turkey is fully cooked through and peaches are softened and juicy. Set aside.
TO MAKE YOUR PEACH & MINT CREMA
  1. In a blender or food processor, combine greek yogurt, mayonnaise, lemon juice, peeled peach (remember to save the skin you peeled off for your topping), and mint leaves. Blend until smooth and creamy. Set aside.
TO MAKE YOUR TACOS
  1. Chop the reserved peach skin into small, bacon-bit-sized pieces for a sweet and colorful garnish.
  2. Warm mini corn tortillas in a dry skillet or microwave until soft and pliable.
  3. To assemble your tacos. Lay down a warm mini tortilla. Spread a spoonful of the peach-mint crema on top of it. Add a scoop of the turkey-peach mixture. Top it with another little drizzle of crema. Sprinkle with chopped peach skin, and fresh mint leaves to your liking.
