TO SHAPE YOUR CHEESE INTO FOOTBALLS.
  1. Scoop teaspoon-sized portions of honey truffle goat cheese and gently roll between your palms to form ovals. Lightly pinch the ends to exaggerate the football shape.
  2. Place the shaped cheese bites on a parchment-lined plate and refrigerate for 15 to 20 minutes to firm up.
TO MAKE YOUR PRETZEL CRUMBS
  1. In your food processor, blend down your pretzels in to small crumbs (not sand). This takes about 1 minute.
  2. Pour the crumbs into a sieve over a garbage can and sift out all of the sand-like dust. You should only have crumbs when you are done.
  3. Pour the crumbs into a small bowl.
TO ASSEMBLE YOUR FOOTBALL BITES.
  1. Roll each football-shaped cheese gently in the pretzel crumbs, pressing lightly so the crumbs adhere without flattening the shape.
  2. In a small bowl, loosen the softened cream cheese with just enough milk or cream to make it pipeable. Transfer to a small piping bag or a zip-top bag with a tiny corner snipped off.
  3. Pipe a short vertical line down the center of each football, then add small horizontal lines across it to mimic football stitches.
  4. Serve immediately or refrigerate until ready to enjoy. For best flavor, let them sit out for 5 to 10 minutes before serving.

Notes

You can make the shaped cheese portion of this recipe up to two days in advance but it's best not to coat the bites with the pretzel crust until two hours before serving them. Otherwise the crust will start to absorb the moisture from the cheese and lose some of its crunch.
