Instructions

TO MAKE THE CHOCOLATE SHELLS
  1. In a microwave-safe bowl, melt the milk chocolate in the microwave in 30 second intervals mixing between each one until smooth and glossy.
  2. Using a pastry brush, coat the inside of the large mold cavities with a thin layer of chocolate. Chill for 10 minutes, then repeat for a second layer to ensure sturdiness. Chill for another 10–15 minutes, then gently unmold them and set them on a plate.
TO MAKE THE HONEY PEPPER RICOTTA FILLING
  1. Line your strainer with cheesecloth. Strain your ricotta for about 10 minutes.
  2. Blend the ricotta and cream cheese in a food processor until smooth and silky, about 20 seconds.
  3. Add honey, salt, black pepper, and vanilla bean paste. Whip again until light and even.
  4. Chill for 20 to 25 minutes until the texture is soft but stable.
  5. Transfer to a piping bag.
TO FILL & SEAL YOUR CHOCOLATE SHELLS
  1. Pipe the filling into 3/4 of the way up in half of your chocolate chocolate shells (so 12 halves should have your ricotta mixture in them).
  2. Only unmold the shells you’re about to join. Keep the rest in the mold to prevent softening or cracking.
  3. Warm a plate in the microwave. Then gently press the rim of an empty chocolate half against the warm surface for roughly 1 second to just melt the edge (this is your "glue").
  4. Immediately, place it on top of a ricotta filled half and gently hold together. Hold for 3 to 5 seconds to seal.
ADD THE JINGLE BELL DETAILS
  1. Use a slightly warm metal tool or the tip of a knife to press/score a shallow “X” on the top of the sphere.
  2. Add tiny indents on the ends of each line of the "X".
  3. Use a dry brush to gently dust the outside of each sphere with luster dust. Buff lightly to bring out the shine.
